BS/JC if you're min-maxing, mining/JC if you want bang for your buck.
BS/JC'ing is done for the two extra sockets and the Dragon's Eyes, and as I'm doing, mining and JC'ing is good for a quick way to make money.
FYI though for those who are saying skinning/LW, you can make mail from LW'ing, but at 80 it makes little to no difference because the wrist armor really sucks. Same thing with skinning, 1% crit at 80 is not something to be leveling from scratch. Herbalism/Alch is good in general but doesn't offer any realy good perks to our class other than 2 hours on the flask and a slight boost in the flask's power. Herbalism is...well, like skinning, a joke of a bonus. If you can name any time where a 3,000 point HoT will save your ass I'm all ears.
Edit: I reread your post, and mining and JC'ing is still the way to go. You can mine your way though the areas you're leveling in, prospect or use the ore that you get, and go to town leveling JC'ing. If you really want to keep enchanting though pick up Tailoring (I wouldn't recommend it), Blacksmithing (which you said you dropped), or JC'ing. You can take the greens you make there and Disenchant them, giving you free leveling mats for Enchanting.

I went for Leatherworking and Skinning and too be honest it is quite beneficial but not very good money maker. I would probably suggest it if you want to be making stuff for yourself as sometimes you can make gear which would take a while to achieve, however you also get to a stage where some things you get from questing is actually better. Until you hit about 400-450 really...
Then again if you wanted to go Engineering, nothing stopping you, you could make yourself guns and then just buy the leather to make yourself the armor...
if u did leatherworking to make urself armor itd b pretty useless at lvl 40 when u start wearing mail.
Um, then as a LW you can make mail armor once its leveled enough lol.
