I'd go with the dark nature of the Curse of the Worgen is interfering with their ability to contact the Light. Any paladins from Gilneas who happened to be in Gilneas at the time the Greymane Wall was sealed probably became warriors. The worgen have warriors!
Those that were stuck outside the Wall simply settled through-out the rest of Azeroth.

My questions however are: How did these Worgen not lose their minds, and do the quest-givers in Darkshire ever mention the Worgen their once being human? If not, where did all those blasted werewolves come from?

The Gilneas Worgen are Cursed beings, the Duskwood/Ashenvale ones are from another Dimension. The Gilneas worgen happened because Argul was messing around with the Normal Worgen, trying to get them under control, but he made a mistake and created the "Werewolf" version instead, once that happened, he ran away to Shadowfang Keep with the few non-mutated Worgen he had still under his control and started to try to fix what he had wrought.... till the Lich King got his hands on his corpse and decided to set up the Wolfcult instead.

I'm sure that will all be explained, at the latest when we start questing in Gilneas. But it seems that there are humans-turned-Worgen as well as Worgen being a race to themselves from some other place (and possibly time). This might be part of the explanation for these discrepancies.

Heh, sorry, read the "Know your Lore" column on Wow.com about the goblins and Worgen recently, and the info they give makes a crap ton of sense for what blizzard is setting up.

It's possible that there were very few paladins (or none at all) that came from Gilneas in the first place.
I mean, one could surmise that, say, the nation of Dalaran didn't contribute any of their people to the Silver Hand in the Second War since they're focused on arcane magic, and not on knighthood or divine magic.
So maybe, somewhat similarly, the Gilneans just generally weren't very devout people in the first place, and very few or none of them were particularly inclined to join up with the whole Holy Light thing. It may not necessarily be related to the whole Worgen thing at all.
Obviously I'm completely speculating here, but it seems like a possibility.

I assume they lost the power to channel the Light, much like the Blood Elves did. And before you say "Worgen Priests," keep in mind that some race/class combos are mere gameplay mechanics and not based on lore (Forsaken Priests, Worgen/Goblin DKs).
There are a few common mistakes there. First of all, Forsaken priests can wield the Light, it just hurts whenever they do it. In lore, there are Forsaken holy priests (like the ones that work with the Argent Crusade).
Secondly, the Worgen Curse does -not- cut off one's ability to wield the Light. Worgen aren't demonic, or shadow - they are just often stereotyped as being so. Worgen are in fact druidic. The way the curse spreads (through blood) and the insanity that follows is shadow,
however
all of the shadow is flushed out of a worgen's system when they go through that Night Elven ritual thing. There's even a worgen priest NPC in duskwood (Sister Elsington) that is highly implied to be a holy priest.
Goblin Death Knights is plausible... They may have just been non-Bilgewater goblins that simply joined the Horde after they were freed under the banner of Bilgewater.
The only thing I do agree with is Worgen Death Knights. The only reason Worgen DKs exist in game is because Blizz seem to think that hero classes should be available to every race, even if it defies lore. And yes, I know that Blizzard even gave a "lore" reason for there being Worgen DKs, but that reason is riddled with holes in the lore. There is also the fact that there's not one single Worgen DK NPC in the game.

Um, 1) You necro'ed an ancient topic.
2) Yes the Forsaken can use the Light if their Will is strong enough; however, it still hurts them a lot and most of the priests would rather stick to healing with the Shadow as that can be used to heal a Forsaken.
3) While the Worgens aren't cut off from the Light...Blizzard has never said which Light they call on: Entirely possible that the Worgen Priests are followers of Elune now.
But as you seem to missed it through both of the Worgen paladin threads: The Gilnean members of the Silver Hand remained outside of the Wall at the end of the Second War, that's why they have no Paladins at this point.

I still say Worgen would suffer extreme pain, like the undead.
Didn't it say in Warcraft lore that Paladins could not be cursed, at all, ever? Or something like that, before undeath got an upgrade?

why did you put Elune in all of this .. the worgen curse is purely druidic ... the first worgen were normal druids but since the wolf spirit(Lo'Gosh) is way stronger than that of the cat or the bear ... the wolf form that the druids can try to change in to requires a much stronger mind and since the first druids of the pack didn't have that... they lost their minds ...
if i am not mistaken even before the graymane wall all the paladins were a part of the silver hand and thus when the wall was build they weren't in gilneas ... they were actually fighting
