Very good post Felet.
I see you have not included lvl80 epics that are crafted by proffesions. Is that because they are too expensive? I have made a simular list too:
Name
Back Wispcloak AH
Chest Wildscale Breastplate 78lw
Feet Earthgiving Boots AH
Hands Overcast Handwraps 78lw
Head Helm of the Majestic Stag REP
Leggs Earthgiving Legguards AH
Neck Chaotic Spiral Amulet Norm
Shoulder Overcast Spaulders 78lw
Waist Ghostflicker Waistband REP
Wrist Wound-Binder's Wristguards REP
Finger1 Signet of Hopeful Light REP
Finger2 Enchanted Wire Stitching Norm
Trinket1 Soul Preserver norm
Trinket2 Darkmoon Card: Illusion AH
Main hand Titansteel Guardian CRAFT
Off.hand Prison Manifest BOE
Idol Idol of Lush Moss Marks
Is it worth taking a kick ass cloth chest over a medium rare lether chest?
Moonshroud Robe
Wildscale Breastplate
Tunic of the Unduly Victorious

If you're not going to go out and pay or farm for the BoE epics, then this is the list you need to be looking at for Resto spec.
There are some really nice Cloth items you can pick up along the way until you get the actual leather ones. In fact, most of the resto gear I've grabbed thus far is cloth, sadly.
