Key bindings. Looking with your mouse is fine.
Clicking is slow in PVP so you're at a disadvantage when opposed to those who have keys binded.

Keybindings. No matter how you try to justify clicking, keybindings ARE faster. Also lets you turn faster as well.

Yeah I never used many keybindings for over half my WoW playing years on my Hunter. But once I got more into pvp, I tried keybinding more; now I don't know how I played without them.
I now have nearly everything keybound on all my characters. Huge advantage over people without keybindings when it comes to pvp.

Though there
is
one thing where mouseclicks are faster, and that is healing.
In a raid situation, or even just in a group, you very much heal faster if you have heals (and dispels) bound to click combinations than if you have to switch targets constantly and then use keybindings.
But if you're going to play a warrior or mage, it doesn't apply :) Just mentioning it in the interest of general discussion.

I'm somewhere lke 65-35 Keybinding-Clicking. All my often used skills are bound, while the less used ones are clicky.

/cast Greater Heal
Have that macro and others like it on your number keys. 1-5 or whatever. Simply mouseover a unit frame and click your binding.
But thats pure healing. I use click-cast mods to do what you're saying since I have my attack spells on the number keys.

I have pretty much everything that I have in common use keybound, but less common things aren't. I really need to start making some mouseover-cast macros, though, for things like Blessing of Protection...
I used to click on everything and I can't imagine going back to playing like that. For classes like warrior or hunter with a lot of buttons, though, it gets a bit tricky.

I dunno - I tried it, still found click-bindings faster. I guess I'm just used to it. To each their own :)
As to the original question, I don't know about Mages but for my Warrior I use Control-F1-2-3 ALL the time to switch stances. I can't imagine how to switch with clicking.
I've bound shapeshifts on my druid to CTRL+, too. I used to shift with clicks, it always got me killed because it was just... too... slow. ("Oh, damn, this thing hits hard, let me just quickly mouseover to my bearform shapeshift button from the other end of the screen... damn, dead again." :P)
