I wouldn't go anything but gathering from 1-70. Take up skinning and mining, so you have the gathering professions for both Leatherworking and Engineering and decide when you get closer to 70. Or you could decide right away, and start saving up mats for powerlevelling the chosen profession when you're 70. But that's just me.

I wouldn't. Leatherworking is too much hassle and the BoP gear is bad for druids.
Engineering is very nice for Druids. Roll that.

Engineering/Mining and Alchemy/Herbalism are both good for a druid.
But if you're a feral, I think it'd be better to go alchemy instead of engineering.

I have a leatherworker, and it's one of the better choices for a druid because the specializations fit extremely well with a specific spec. However, depending on how large or avid your guild raids, you may be changing specs a lot, and then it can become a hassle. I make tons of gold by selling my skins and crafted junk. But I also have a toon for alchemy/herbs, engineer/mining, tailor/skinner all to fit anything I might need. You'll also find that if you are in a larger guild you plan on staying in you'll get to know people who can craft things that are BoE items, which makes chosing a specialization easier.
Leatherworking items can generally be upgraded by BoP drops in higher raid instances, just keep that in mind.
