I'm a bit of an altoholic, but I don't mind, gives me something to do during down-time with my main:
80 Paladin (main)
80 Rogue (old main)
71 Shaman
36 Priest
26 Warrior
24 Warrior
16 Warlock

I have ADD, and I find it harder to level. I mean... It's just a rotation... X-X-X-X-X-X way too boring for me. However, when you throw getting hit for over nine thousand DPS fire breaths while dodging walls of pure lava, and trying to make sure that adds are not on heals, and making sure you have enough health, and if not blowing cooldowns, etc etc... Way more fun.

Horde:
60 Shaman
36 Warrior
17 Priest
Alliance:
73 Hunter
64 Druid
64 Death Knight
38 Rogue
At the moment my favorite is the shaman, I took him from 47 to 60 in 3 days before I took a break from WoW. The other 6 are all about even.
I've also deleted a mage and warlock that were both 40.
I can't even focus well enough to get to 80 ha.
I know where you're coming from =)
EDIT: Managing time spent on my toons so they all stay fully rested is a huge bonus, and lets you level significantly faster. In /played time, anyway.

i already got a level 80 (Horde) but figure i get someone else up there.
im at the point where i'm just leveling different classes to level 30 to see which i want to continue with. Plus i want to get a Alliance to 80 too (but i cant really hook anyone up as the highest i have is a 58 DK).
I have a Druid, Shaman, and Warlock (all Horde) at that point. Currently working on a Priest (level 22 Alliance)(so far the most pita to level). Then will move onto my Mage (level 15 Alliance). I might try out a Rogue after that, we'll see.
So far, i like the Shaman the best.

What i found that helps me is setting up a schedule. Each week i work on only one toon. The only time i will switch is when the guild is going to do a run and ask me to grab a specific toon to go. With this method i have been able to level 10 toons to 70+.

If you have the means or friend who wants to play, I would suggest leveling everything sub 60 via RAF or Dual box. It makes the crap levels go by a lot quicker.
80 - Priest
80 - Death Knight
80 - Mage
80 - Shaman
69 - Druid
69 - Warrior
62 - Paladin
60 - Huntard
60 - Rogue
60 - Warlock
Usually once I hit Northrend I am good to go until 80 and just cycle toons when I am out of rested xp.

My (not so impressive) lineup:
Alliance:
80 Druid (main, raiding char)
80 DK (basically retired, tanking heroics occasionally)
22 Paladin (gets played when I'm very bored which doesn't happen often)
13 Hunter (a Dwarf ... I find them ugly, doesn't get any play time and will most likely be deleted when Cataclysm hits to make room for a Worgen)
5 Mage (I let my gf play with that one but she isn't really the leveling type)
Horde:
78 Shaman (will be my "main alt", planning on doing hcs and casual raiding)
32 Priest (retired, didn't enjoy the leveling on that one)
16 Warlock (will be the next char I lvl when I'm done with the Shaman)
7 Warrior (retired, didn't like it)
5 Rogue (retired, didn't like it)
One of each class and race ;) But most low lvl.
The Druid is the perfect main. I can tank and heal and he is just awesome for raid progress.
I also enjoy my Shaman a lot, hope to get into some healing / caster dps with that one. Only downside is that Horde only has ugly races for Shamans, mine is an Orc and I don't really enjoy looking at him anymore. It was fun to have a green beast the first few levels but in the long run I'd prefer to have something pretty in the center of my screen.
I leveled the DK mainly because he starts at a high lvl and I wanted a break from Druid tanking. It's quite boring and on paper DK tanking seems to be much more interesting. Now that he is 80 however I found that I don't really enjoy DK tanking that much after all. So he is retired and I'm keeping my Druid dual specced healer and tank. Only when the guild needs a tank for some heroic run I occasionally dig up the DK.
Warlock will be the next toon to level, once I get heirlooms with my Shaman. It's a female Blood Elf so I got something pretty to look at ;) If she ever gets to 80 I may even have that one as my "main alt", meaning the char that I play outside of raids.
In raids nothing will ever be able to replace my Druid, totally love that class ;)
I usually also cycle classes, making sure that I level one toon only when he is rested. No point in wasting time not being rested ;) That way all low lvl chars get the occasional level after I made some progress with the high lvl ones. But since raiding on my main takes up most of my playing time anyway that's rarely ever necessary, most of the time the high lvl non-80 toons only get a few hours on the weekend so they are always well rested.

Well I too am said altoholic..
Was so excited to get my Pally to 70 on Nagrand. Although hated the levelling. Thought when I hit 70 I will have so much fun. When I got there didn't really know what to do. Ran some BG's for PvP gear and thats about it. Got bored quick because I didn't really have anyone showing me what was next. Just heard a lot of stories about what to do..
So made a hunter on Alliance. Got him to 44.. loved it. Then made a mage.. got him to 20 as a bank alt. Didn't really need a bank alt so got him to 25 then made a rogue. Got him to 12.. hated it, so made a lock.. liked hunter better, so got him to 45.. then found a friend on another server.. switched my 20 priest over there... got him to 80. Thought ok now a friend is there to run with.. got bored running 11tybillion heroics for badges...
Summary...
I don't have time at night really for a 4 hour raid.. especially when you only get around 1 (if you're lucky) drop to call your own. Most nights I end up with 3-4 badges.. 4 hours for 3-4 badges? Or the alternative - Run dallies for an hour to get gold.. for what? Another gem I will upgrade? Or a chant someone else thinks I should have?
I made another hunter.. this time on the same server as my 80 priest. She is currently lvl 10. Loving the hunter again. Will probably stick with it till 80 I think. Just run my priest to break it up a bit and get some heirlooms. Got the chest and shoulders for my lock and mage. Now get the mail ones for my hunter.
Just having fun. I pay for it so I play how I want, and so far levelling toons is fun for me. I like popping on for an hour them logging off.. back on back off etc..

My main reason for being an Alt-aholic is cause myself and some guildies get ideas for lvling teams. We have alot of fun with it by doing differant race/class/spec combo's.
I have all alliance on lothar :
80 mage (ffb)
80 shaman (enh/resto)
80 dk (unholy)
75 druid (balance/resto)
77 lock (aff)
72 rogue (combat)
77 warrior (arms)
73 pally (prot)
77 hunter (bm)
I would have to say the mage, shaman, and druid are my favorite ones to play followed close by my warrior and hunter.
