Give me examples on how some of the following races would be death knights.

2nd War Death Knight's were made by Gul'dan not Ner'zhul, Ner'zhul just used them to collect the items needed to create the portals so the Orc's could escape to a new world, and the Death Knights could escape to their own world. As of this time, other then the ones actually killed by Alliance Expediation, most of the orginal shadow council Death Knights are thought to have escaped into a portal at the time of Draenor's destruction so....it's possible we'll see them again at some point.

Everyone eventually dies to become the death knight; Arthas lost his soul to Frostmourne, then slowly his body "died" during the trek through Eastern Kingdoms across to Kalimdor then back to Northrend. The other Death Knights, those who were paladin's and priest's who hunted out the Scourge after they lost their lives, they willing gave up their lives for the power of Death. Everyone dies when they become a Death Knight, it's just how they go to their death's that sets it up if they have a mind or are just cannonfodder for the armies.

Nah, orc, tauren and Island Troll death knights are easy to explain....... their leftovers from Hyjal, after all the Scourge was part of the assault, would have been easy for their corpses to be put in meat wagons and dragged along as Arthas and Kel'thuzad returned to eastern kingdoms.

Heh, the wowwiki page is pretty obivious about how you become a death knight. But even then there are three types of Death Knights: Commanders, captains and Knights:
Commanders: High ranking warriors of the Light who willing came to the Lich King and asked for the power of undeath, these types retain everything of their previous personalities, and they usually take the longest to die.
Captains: Can either be volunteers or powerful warriors the Scourge slays and need to keep using; best examples of them are the current horsemen: the Lady and Baron love being Undead monsters, while Zielek and Thane were forced to become Death Knights.
Knights: These are the people who die and are raised as the knights. They usually had some type of power before their death, but one and all they are dead before their captured.

You lose your soul eventually, but the body will die after a while. No matter what everyone says, by this point, The Lich King's body has been soulless for almost 8 years now, more then likely the mortal shell is now dead. We know Arthas had enough blood left in his body for Sylvana's poison to aftect him after Hyjal, but since then, the body has been injured but no blood is seen any longer.
