Because most people looking for guides are looking to level fast, and the fastest way to level is by DPS. People make these guides for ad revenue or to sell the guide directly, etc. There isn't a big demand for spec training guides.

I think the place where you and I see differently is that I don't see a large number of posts from people claiming that you should level as your desired spec. Sure there's a minority that says so, but I think a similar minority will probably encourage you not to use levelling guides at all.
I think the incumbent is on you to find a way to learn your class, whether it's by levelling or some other path. It's obviously more difficult to learn a class all at once, when you suddenly get all your talents and level 80 abilities dumped on you, so I encourage first time players to respec a few times as they level—but whatever works for you, you know?

New players don't need guides. People should be allowed to pick up the basic mechanics of the game at their own pace, without somebody coming along to hold their hands through the most mundane endeavors. I would argue that your approach does more harm than good, and by spoon-feeding new players you are hindering their ability to adapt to new patch changes or raid mechanics. Just telling somebody what to do breeds intellectual laziness in real life and in WoW, and does nothing more than create minds that lack critical thinking skills.
Sure, you could devote the time to explain
why
things work, unlike most other guides, but to accomplish that task with any degree of success you'd probably end up copy-pasting from EJ.
Newbies don't need guides. They need to play the game and try to figure things out for themselves. Once a new player reaches a level where they feel comfortable with the basics they can opt to find class specific information so they can take their game to the next level.
Lowbie guides = no.

If someone is new to the game my advice would still be that they spec DPS to level at least up until 10 levels from the cap. Because the early game is so devoid of people that you'll barely get any experience out of trying to solo 95% of the time as holy or prot. You're just dpsing slowly and you won't actually get much, if any group time to practice your desired role.
Once you can start doing the newest 5-mans, it's usually easier to find groups and you could potentially level mostly from dungeon runs.

one flaw in your reasoning. to actually learn how to heal, you have to heal a group and not dps in a heal spec (which is what lvling is unless you discovered the secret art of healing mobs to death) or for tanking keep aggro on all mobs but since when you are lvling that is automatic you're never challenged to become any better at that so you can hardly say it really enhances your tanking capabilities.
so that rises the next question at least on my server there are very few parties to DM even less to stockades and almost none at all to all the other instances till you reach outland and it's only in northrend you can with any regularity find a party to instance and make it a 'viable' way to lvl. so at least till outlands and probably till northrend you'll just be dpsing so you might aswell do it in a dps spec so you at least learn to dps well since it will be one of your off specs and at lvl 70 or even later like 76 you can respec to a heal or tank spec and still have plenty of time to get good at it before you reach 80.
