I'd go with something like..
Spellpower > Int > Crit > MP5 > Spirit
MP5 is a lot more useful for a disc priest then spirit (we dont really have any talents to make spirit useful), but you only really need to gem etc for MP5 if you're having mana problems.
Spellpower is incredibly useful for a disc priest as it boosts the effect of Power Word: Shield, which is in essence the bread and butter of discipline.
Crit is also useful to have due to
Divine Aegis
, but if you're going to gem something go for spellpower over crit.
Haste is useful, though you'll get enough to hit the softcap from gear naturally, since cloth in WOTLK seems to be stacked with haste. (Less useful because of
Borrowed Time
).
edit:
haste/crit I find are really dependent on the drops you get. You may run ICC or such and get a bunch of haste cloth, or you may get a lot of crit cloth, but I wouldn't gem for either etc.

My God Jim! I'm a Priest! NOT a paladin!
I am sorry, this was great. But also might lend itself towards one of the misunderstandings that people looking at priest from the outside in might make. It is often simplified that holy priests are raid and that disc priests are tank and that you can replace a holy paladin with a disc healer for 10man tank healing....Some people might then make the bad logical jump that what is good for one tank healer is good for the other simply because they are filling the same role.....thus the "stacking of INT like there will be no end in sight if corrrect for holy paly's, is correct for disc priests"

I think it was on Tankspot.com's Priest guides that it was recommended to gem INT over SP for progression raids, since you can't know how mana intensive a fight is when it's on progression mode, unlike farm mode. I know I'll need to stack more Longevity once we start doing ICC hard modes...
^ This.
I was still gemming intellect until the end of Ulduar. Essentially everything at that point was still progression content — Yogg+3, Vezax, hardmodes, preparing for then-unknown tier 9 content. 40k mana may be a little excessive, but a priest who gems Intellect is essentially not "wrong" as opposed to a priest who stacks SP.
The SP priest will be able to do more throughput and/or mitigation, while the priest with the giant mana pool will be able to stay within the 5SR for 10 minutes straight and might be the last healer alive who still has mana left. If there's no mana spring totem or only 1 source of Replenishment (i.e. in a PuG or if one of your teammates has died), a larger mana pool would definitely be beneficial.
So, between SP and intellect (or, for that matter, haste or crit or mp5), neither is right or wrong. You gem for what you need, not what others think is better. However, if you're gemming Strength then you are wrong.

Duh, you gem agility.

When gearing for certain stats, go for Spellpower > Int > Crit > MP5 > Spirit. Your best stat no matter what is spellpower when it comes to bigger heals. Your best regen stat is Int no matter what due to replenishment, hymn of hope, shadow fiend, and rapture. If you need a blue gem requirement for a meta, get a spirit/spell power or a spirit/int gem. Other than that, don't worry about matching blue sockets unless the bonus is really really important.
For the most part you will just pick up anything that you can wear that doesn't have hit rating on it. Beyond that it is just a matter of balancing mana regen and spell power. Are you running out of mana? Yes = Int No = Spell Power. It's that simple.
One thing to note is if you plan on being holy often you may want to prioritize spirit over Mp5 for a disc/holy set.
