I think having enchanting and jewelcrafting is the most powerful combo you can have as any caster. Odd, I know. With enchanting, you can enchant your own rings and with jewelcrafting you can get those epic dragon eyes gems. I saw a mage from my old guild having these 2 professions and I thought it was pure genius. The biggest downfall would be to having to buy everything for the JC profession unless you have another character you can mine with.
If I didn't spend so much time on tailoring getting epic recipes I would've seriously considered dropping it to pick up JC for the dragon's eyes.

Jewelcrafting is pretty much the best for any class.
Cause, you can gem for output or regen, and with inscription/enchanting/leatherworking you're stuck with just output.

Why is nobody here mentioning Embroideries? At lvl 80 (I don't know what lvl u are?), your
LWE
is easily one of the best DPSer's item enhancement you can get on ANY item aside from weapon.
And if you ARE leveling, you get to make yourself some great items to help you level.
Robe of Power
is used for a really long time and is super OP for its level.
The profession you pair this up with for shadow can be a number of things, but for you I would recommend:
Skinning - Crit increase, probably the 2nd best for you especially if you don't want to get items elsewhere for leveling up another crafting profession
Enchanting - Probably the best for you because you get your own item enchantments which increase SP and you don't need to buy too many mats on AH if you're leveling. I suppose if you're lvl 80, you could go grind through a few low level instances and walk out with piles of dust and essence.
Herbalism - Weak heal, soon to get a buff, but you can cast it in shadow form. good for leveling.
These suggestions are for the type of player who uses their profession to increase their effectiveness in the class they play.

To answer you question about using tailoring to lvl enchanting. In tailoring, you can create green, and blue items. You then Dis-enchant them to get mats for your enchants. My Spriest is tailoring and what I do is if I create a green or blue I'll send it to my druid to DE and use him to make enchants or whatever. JUst like others have said here you need to find professions that work well with each other. Some examples are:
2 gathering such as Skinning & Mining or Herbalism
Tailoring & any gathering professions
Enchanting & Tailoring
Alchemy & Herbalism
Inscription & Herbalism
For the best profit go Mining and Skinning.

Tailoring has a regen embroider.
Don't forget to use your cloth specialization cooldown like Moonshroud (ESPECIALLY!), Ebonweave, and Spellweave.
ALL of the BIS craftable items out of Ulduar are using these cloths keeping the prices very stable and relatively high. You can make excellent profit from these!

The only problem with this is that the cd on these items is 3.8days! In the time you are waiting for the cd you could have made ALOT more money doing something else. But if you do take this route make sure to become specialized in Mooncloth/Moonshroud. On my server the only thing worth selling is the Moonshroud (still well over 100g for one - whereas Ebonweave & Spellweave usually fluctuates from 40g to 80g)
Although the mats to make these cloths are relatively easy to obtain, making roughly 300g in 4days seems hardly worth it imo.
The only real benefit to Tailoring now is the embroidery & bags.
I use my Tailoring as supplementary income. I do use all of that excess Frostweave I can obtain to craft items and make enchanting mats, which also sell very well. Lately, I've also gotten into the habit of sending the cloth I get while leveling toons (ESPECIALLY Netherweave!) to my tailor to make into items to turn into enchanting mats. BC Level enchanting mats go for tons of money and they're retardedly easy to come by.
Bags are not a particularly big draw for me to have tailoring. though I do use it to make those nice 22 slotters, which sell quite well on my realm. Good thing I have a 2nd tailor that is Ebonweave spec'd. ;-)
