I sorta tried this on a low level Druid - Offhealing, DPS'ing when it was needed, or taunting a mob when it was running rampant. It worked surprisingly well, and not only did I enjoy it, but it also required more thought, than simply button spamming - I was paying attention to everything, from health bars on my allies to those of my enemies.Lower level toons aren't as dependant on their gear or spec since there is so little difference between them at that point.
However, this would obviously not work with the higher level instances - Imagine doing a Northrend dungeon like this! You'd be booted before you could hit enter to type.
That's why you collect different sets of gear and dual-spec.
PS. Also, can you imagine 10 or 25 people doing whatever they think is needed? That's why we have roles such as heals, tank, dps, CC... Sorry, but the majority of WoW players can't multitask like you did with that low level druid.

I had a druid in a group for hc cos where I was tanking doing this. Yes, I was very close to kicking him :)
Although I only started WoW in early to mid Burning Crusade, I hear that classic WoW was a lot more like what I am describing than how WoW is in, say, Wrath of the Lich King.
Well, you still needed tank/healer/dps for running dungeons. But since you had 51 points and the talent trees were only 31 points deep you had more points to spend in your other trees while going still going all the way down in your primary tree. So in a way, you were more of a hybrid than you are now. Also, gear was generally not as specialized towards a certain role. Take a look for example on the tier 0, 1, 2 gear for the hybrids. They generally have a bit of every stat, but once in a dungeon you had your specific role (likely healing).
I have no previous experience from any other games in the same genre. But from what I understand the tank/healer/dps setup is rooted pretty deep. From a game design point of view it would probably be pretty hard to deviate from this configuration. Having specialized roles adds depths to the game. I don't think a game like wow without any defined roles for group play would be very interesting.
