Are you gemming/enchanting for hit/expertise?
I read mixed reviews on that and I'm not sure if it's worth it or am I better to stack dodge/parry and stam..
Any thoughts?

no that's just silly. you'll be just fine with hit/exp on gear and hold aggro.

I gemmed for Stamina and mitigation/mastery, and reforged for hit/expertise. (The only reason is really my own fear of the RNG.)

no that's just silly. you'll be just fine with hit/exp on gear and hold aggro.
how is it silly? hit & expertise are the only two stats that can help you mitigate magical damage (and they help with physical damage as well).

When MOP first came out I started going with mitigation over control, reason being that I wanted to take less damage with early Heroic gear going into raids. Although that did work and still does, I'm finding that going for control is better suited for me since I have much more gear now (currently 484 with only one LFR piece which is a ring).
With going for control over mitigation I effectively lost about 5% parry (i'm down to about 15.5% when I was about 20% with 24% block or so). I had .93% hit and roughly 4% expertise, which wasn't an issue for my threat but it did put a bind on my rage generation at times. So I've now opted to go for Expertise and Stamina combo gems for my red and blue sockets because much of my epic gear is mitigation based anyway, and it sadly has way too much dodge...I have no idea why they put so much dodge on everything but for a while it was getting hard for me to keep it under 10% so I could have double that amount in Parry. Also I am using green Mastery and Stamina gems for yellow sockets and reforging the rest that I can into either Mastery or hit, with a few pieces reforged into expertise.
I am now at almost 7% hit and 7% expertise and having done HOF this weekend with 2nd boss down I have seen an improvement not only in my damage but my survival as well, at least in terms of being able to keep shield barrier up more. Can't really justify tank DPS on Gara'lon imo because of how the fight works, at least the way we've been doing it. But I have been pulling about 40k or so on him even with having to kite.
Looks like I'll know more later this week after the reset. :)

And I don't use Shield Block at all; only Barrier.

I feel the uptime of Shield Block / Shield Barrier, more than makes up for the drop in avoidance and mitigation!
If you're using shield block you are doing it wrong :P
Sure the guaranteed blocks are nice but no where near as helpful as the absorbs from barrier. Especially because it scales with AP, so stick to using that for now :P

You must have gear that already has hit/exp on it because currently with my gear (486 2 HOF LFR pieces) I barely have any at all to give me an initial boost, so I have to gem for exp/stam and mastery/stam.

Holy cow your mastery is low! And I was right about the amount of threat stats on your gear, the majority of it has hit or exp already on it making it exceptionally easy for you to reach those numbers. It is interesting though, with less gear I have maybe 50k less HP than you but I'm not hard capped on exp, just a little off the soft cap. Plus my block is still over 21%
