The grimoires are very close dps wise for each spec except Affliction, sacrifice is a pretty clear winner. One thing about the information those guides are basing their recommendations on, They assume you and your pet will be able to attack your target 100% of the time, or at least the exact same time.
However that is not always the case, so - If you are out of range, los, or cannot attack your target at any time during a fight, (while your pet could) it'll always be better to have the pet for that part of the fight than to have it sacrificed.
That said, I think you may be misunderstanding
Grimoire of Sacrifice, if you use
to bring back your pet, you loose the sacrifice buff. FoX is there just so you have an option of summoning a pet instantly.
Oh no, I understand it. FoX (It has an acronym? Thank god.)-- I was just asking if the cost would be worth it to use it after the buff was over-- Like, use it if Chaos Bolt is only usable, but not if Shadowburn is and just summon the Demon, or something along those lines-- I don't know; I was asking.

So, to me, if the DPS is very similar, it seems like this then:
Grimoire of SacrificePros: Very nice boost to your DPS
Cons: Must be able to attack the enemy. In a high-movement fight, this could be bad. Also, something interesting-- Affliction Spells are boosted 50%, Demonology 30%, and Destruction 25%
and spells "modified by Fire and Brimstone are unaffected." So it's a nice boost, but not nearly as big to Destro, and that also means it only boosts Rain of Fire in Destro in terms of AoE.
Pros: Sustained boost to your DPS
Cons: No burst-- that means that although your Trinkets and Cooldowns will affect your Demons at all times, you can't sync up the Grimoire like others to get a super-big-IT'S OVER NINE HUNDRED THOUSAND hit or something like that.
(Edit: Along with Grim of Sac, this does actually provide AoE burst, considering the Abyssal.-- And Single Target burst with your Terrorguard-- It's just not as much considering the sustained part.)
Grimoire of ServicePros: A nice boost to your DPS, and it works if you can't hit your target or have to move a lot.
Cons: On fights where your pet may be buggy, or where there's AoE (remember, Destro-- no AoE Felguard), this is lacking compared to the others. Even Sacrifice at least affects your Rain of Fire.
Overall, I would actually go Supremacy or Service, depending on the fight. If they end up being super close, Supremacy is just awesome. Personally.
