Is this really worth doing for money and chance of a mount?
It depends on the person. Some folks are collectors, in which case every mount & companion (and even achievement) is worth whatever price or time to obtain them. Other players are all about money, so it's worth it to them as well for the items the crates contain.

Are the pet and mount souldbound or can they be sold on AH
Both
Sea Pony
and
Sea Turtle
are BoP, so they cannot be sold on the AH.

Yeah, different people find many different ways to farm and maybe they enjoy one way over the other.
Some people might skin and sell heavy savage leather, some might fish (the mats used for max feasts seem to sell the best), herbs, cloth or just about anything that selllable.
Just gotta find something you enjoy. If you want the turtle mount, than it's worth it to you but maybe you will find better ways to make money.

I have found this to one of the most profitable ways to farm. Way better than the JC shuffle.
This past week i have made over 15k as a direct result of doing the fishing. I spent about 30 mins a day doing this. Not a bad haul.
Thing is its not so much of a secret any more....shame.

It's contested territory on a PvP realm, so depending on how may Alliance are doing it at that moment it could be more frustrating then profitable.
I did 2 hours of farming it on my DK (for Path of Frost), but it didn't seem any more profitable than just farming leather, cloth, etc some other way.
