For those that played a max level monk, which do you feel is the best choice right now?

Brewmasters are meant to tank with two handers(a la Druids and DK's).
Windwalkers are meant to dual wield(a la Rogues and Enchance Shamans).
Mistweavers use whichever combination is best for them.
Not a speculation, it's how the class works.

Windwalkers can use either or, actually
They can...but just like how Enhance shamans can technically use a two hander, doesn't mean they should; you get more bang for your buck with a pair of one handers.

Well, I'm in Beta, and I found I was doing more damage with the dual one handers then I was with a two hander.

Of course not; this is in dungeon and raid situations. The Windwalker is built like an enhance shaman.

We'll likely see them get balanced to be nearly equal, similar to SMF/TG fury warriors.
Except, throughtout Cata, SMF/TG were never "balanced." There was always one that had a clear advantage.

This was because there was lays either a 2H BiS, or 1H's BiS. The same will be true for Monks, in that whichever option has the better stats.

Ok from Tiger Strikes buff seems pretty obvious DW is the way to go.

I understand that I'm leveling, not doing anything at end game or w/e, but I've seen a lot more Brewmasters Dual Wielding than I have using a two hander.
I personnally got excited, thinking we had gotten a DW tank back.

I think, leveling, it's more a situation of whatever you have on hand that's best. I've mostly been using a two hander as I've leveled Brewmaster, but once I hit 30 and could dual spec, I took Windwalker as offspec to get a little more speed out of questing. Since I didn't roll on the one handers that dropped in instances (let the Windwalkers and others take them) I've just been using my two-handers for Windwalker questing.
Now, those shenanigans you see with Brewmasters using 2 one handers? Leveling I wouldn't worry about. If you see someone end game doing it, please gank them. It'll clear the gene pool. ;)
