Hello All,
I've played WoW since the release in 04, and am not here to ask the typical generic noob question of "What Prof should I pick" ... exactly, although it's somewhat similar.
Due to life and time constraints, I don't expect to play endgame anytime soon (or at all really) in MoP, or in WoW in the future. I've leveled and enjoyed most all Profs to max at one point in time or another, and know their ups and downs.
Given that I'm primarily looking at solo play on a Monk (I know, very unique), I'm looking for a Prof that primarily provides utility to help me in leveling and just enjoying the game. With gear from quests nowadays (as compared to Vanilla), I'm not looking at any of the gear crafting profs, because frankly I won't use them at endgame (no raid obtained patterns). My idea is to do Alch/Herb. Herb makes good money, which is a nice side bonus. My reasoning for Alch is that at max levels it does provide nice cash, and while leveling it can provide some nice buffs by using the various elixirs, as well as health/mana pots for zomg moments.
Any thoughts on a max utility prof given my solo play and non-endgame desires? I've considered somewhat seriously Inscription and Engineering as alternatives to Alchemy, but am thinking Alch sounds like the most reasonable and enjoyable selection (for me). Am I missing any good utility bonuses from other profs that might benefit me more?
Thank you all for your comments and guidance!

If you're not interested in end-game or gear, go with two gathering professions while leveling. Herb/Mine. More XP and gold.

I really agree with Garasumi on leveling with 2 gathering professions. You will make more then enough gold during the 1st couple of weeks to level other utility professions after you hit max level.
Once you hit max level I would go either enchanting/JC for a 1 toon mini shuffle for gold or Alchemy/Inscription and have one toon that can handle everything herb related. Since the sholder enchants will be sold by scribes now this could potentially be very profitable combination.
