It sounds like your pet is doing exactly what it should to me. Assist makes it attack what you attack so if you keep swapping then so will your pet. Passive makes it only attack if you tell it to but it's smart enough to not break your CC.
In arenas you really don't want to use assist, you should put it on passive and get used to controlling it yourself (I found it helpful to bind attack to my mouse-wheel up and passive to my mouse-wheel down).
You can macro around it stopping attacking when you fear if you want but after trying that I eventually just went back to letting it do it because fears are more important than your pet getting a couple more attacks in.

Maybe. In arena you should basically be triggering everything they do yourself. It takes a little while to get used to the extra abilities but there's advantages to it too.

Put your pet on passive, make two macros: one for your pet to attack, one for your pet to follow you. Use these macros, keep your demon on passive all the time, and it will only attack enemies you want and will return to you when you call it, so it doesn't run off and get destroyed.

You can also do a macro with /petattack for spells like Shadow Bolt or Incinerate, spells you use after you already focused on the target. Of course it's better to send the pet yourself, without macros, but I know how hard it is to get used to that.
