My next Profession and how to make gold with what I have

So, I've always been OK at making gold, most probably came from my enchanting before 3.3. I've bought epic flying for 3 toons, cold weather for 5, one max Kirin Tor ring, lots of cheap mounts, and a couple boe items. But now I want to step up to the big leagues.
My current toons/professions:
80 Pally: BS/Enchanting
80 Mage: Herb/Alch(Elixir)
80 Pally (Wifes toon): Minning/JC
68 Warlock: Minning/Tailor(Spellfire)
65 DK: Inscription/?
Basically I leveled the DK and Lock to get more professions, though I will level the lock to 80 someday, and I wanted my own miner since my wife doesn't enjoy the "boring" stuff.
So my questions are, what last profession should I get for my DK? I don't have skinning, LW, or Engineering, but I think there might be more money in Alch going transmute spec.
Also, what are the best combos to make gold? Right now I'm thinking:
Tailor CD's every 4 days.
Mine saronite/titanium -> transmute to titanium -> create titansteel every day.
Prospect extra saronite for blue gems -> transmute to epic -> cut good selling gems.
My immediate goals are to get:
The Travelers Tundra
Epic flying for my Lock
A few new tailoring and BS patterns, and maybe the Psaronite to make a few. Psaronite currently goes for about 1.8-2k per on my server.
I have about 15k gold currently and would like to be able to do all these things and not have to worry about gold much in the future.
I am looking for other ways to use my professions that do not require hours in the AH. I don't mind spending time to make gold, I'd just prefer not to gamble. I know I could probably make a lot of money on glyphs, and I will try making some of the ones listed as required for common builds, but I'd prefer more guaranteed methods.

More characters does not make you earn more gold - if you spent the same amount of time on one character you'd probably make more due to not having to flip around. More characters does offer you convenience of easy access to profession-made items.
The AH really is the lynchpin. If you take some time to study it you can learn the items that move easily and can make you a tidy profit. It won't be gambling at that point, merely using Auctioneer to post and collecting the money 12 - 24 hours later.

Thank you all, mostly, for the feedback and suggestions. Demonn, I agree that if I had 100k gold I would consider myself successful in the big leagues. In general I'd like to earn more than I can spend while still having enough time to do the weekly raid and a few other non farming activities. I understand that to keep a consistent income I will need to work consistently. The main reason I wanted so many professions is that I do hate paying crazy overhead costs. I tip, and well, when I need to, but I've seen people asking for 100g for a spellweave CD and other things just as ridiculous and I won't pay.
It seems like most people think the AH or farming are the way to go. Thats sad, but not completely unexpected. In the end, I'll probably do a mix of both. I'd like to think that there are a couple places where I could buy cheap mats off the AH and use my professions to make a good profit. I know that one case is buying blue gems, and matching eternal for about 20-30g and transmuting to an epic gem that will sell for 100-150 uncut, 150-250 cut. However, I already have 20+ of each blue gem, can only transmute one a day, and would farm the saronite to prospect. That's another reason I was thinking of going with a second Alch, because I will usually average more than 2 blue gems per day prospecting a batch of saronite once or twice a week. Spellweave is another good one, but the 4 day CD makes it a slow earner. I know buying the mats for titansteel are barley worth it.
Well, I guess if I make a point to scan the AH daily I'll find something that sells well that I can make. Then just to determine if I should buy or farm mats.

Making money is really easy if you're dedicated. Really, all you have to do is pick something and do it. A lot. Farming,AH,Questing, anything. Hell, I've heard of a guy that made 40k just getting various achievements (harder ones like 'Insane in the Membrane'). It's really just about what you have fun doing the most.
edit: Another thing you could do is farm rare pets. I don't really recommend this because it can take forever and you won't make money as consistently as you would doing other things. If you find a spot where you can farm mats and a pet at the same time then that would be great. I made 3k off one of the raptors when they first came out. If you get lucky you could easily get 5k on a single pet.
But if you started farming the ones that will likely be removed in Cataclysm you will likely make a bundle (if you sell them after Cataclysm).
