Priest. Troll priest. Preferably on Smolderthorn-US (PvP). We need Priests, and good ones.
Healers are in high demand these days, and if you're good... everyone will love you, and you'll always have something to do. If you follow the Energizer Smite Spec guide over on the Priest forums until level 50, it'll be mad easy leveling. And fun. At 53ish that spec reaches it's full potential talent wise, so you have three options from there. Spec more into Disc to improve your shielding, go deeper into Holy to improve your healing, or respec Shadow.
This class is very versatile, and very fun to play. As I said, healers are needed. Being a healer can let you get dungeon groups a lot faster than a dps would. Priests also bring some very strong buffs that everybody likes. :D
Or you could roll a tank. I prefer Paladins or DKs when I tank. Tanks are even more needed than healers (and good ones are very hard to find).
Paladins are extremely easy to level. You could get one to 80 very quickly, and jump right into gearing up in heroics. If you have a lvl 55 character, making a DK is another good tank option. This class is super flexible in the styles off the three specs. I perfer Blood spec for raid tanking, and Unholy for heroics. Frost is the "jack of all trades". Has good AoE and decent single target threat.
However, there is a major drawback of having a new 80 tank. Expectations. People expect you to be at least 30k unbuffed, def cap, and to already be at 102.4 avoidance. Also, you are expected to be flawlessly holding aggro at all times. Until you get some badge gear, this will be difficult, but it's well worth it in the end.
Last point - since you want to start on a new server, I would suggest taking up mining and herbalism as professions. Low level herbs sell very well to people leveling up Inscription, and ore sells good at all levels. At any point once you have a nice pile of gold, you could choose to drop one for a finishing prof, but I find those to be more of a gold sink when not leveled on an endgame character.

I say make an orc warrior or warlock, I like playing them early on.
And for servers I suggest Doomhammer US (Although it is always full) or Hyjal US, my realm.
Btw rolling alts is SRS BUSNSS!

I have found Emerald Dream to be the most fun server. Of course, everyone's definition of fun varies- but if you are primarily into raids/instances, but also like world-PvP (random battles in the middle of nowhere) then ED is for you.
As for class- that's not something I can speculate on. My only toon is a Hunter, so it's pretty much all I know. I find it suits me best because it allows me to be a very flexible damage dealer; if I had to make an alt- I'd make a Rogue for pure pvp epicness.
Started a Hunter on ED. Wish me luck :)
