JC + LW/Enchanting
Lw for stronger enchants to wrists (was there any more to LW than just that? never been LW b4.) or enchanting to 30+ stam/spellpower to rings, each.
and JC for those ossim JC only gems.

generally speaking though JC+BS is the most well balanced combo for a dual specced druid

While this is certainly true it is worth mentioning how big the difference really is that leads to the ">" here.
JC will give you 3 more stamina than another profession for tanking.
BS will give you an equivalent of about 15 AP more than other professions for dps.
So while there definately is a difference it is so small that even the base stats of a race will make much more of a difference than the profession choice. That's why it is really completely pointless to chose a profession based on the bonus.
Every crafting profession will give you almost exactly the same bonus. The differences between them are so very minor (seriously, 3 stamina is not worth spending 5k or countless hours farming to level another profession) you shouldn't worry about it at all.
Just pick any 2 crafting professions that you personally like. I for example love BS for the lockpicks it provides since they allow me to solo old content without ever having to worry about keys. Just find a crafting profession that's useful to you in some way other than the stat bonus. Engineering for example is great for having a parachute and generally a lot of fun gimmicks (like teleporters). Charges also allow you to open many locks (but not all of them like lockpicks). Or go enchanting for the convenience of never having to find an enchanter ever again.
The gathering professions on the other hand are not flexible. Herbalism and Skinning are both not really great for anything and Mining is only decent for tanking and useless for everything else. Don't take any gathering professions if you are not interested in making money.
