To minimize WoW, or any application for that matter, just press the command and M buttons at the same time.

You can't minimize the game on a Mac.. but you can switch very easily between full-screen mode and windowed-mode if you want to split-screen between the game and say, wowhead.
I play on a mac as well, and I find it much easier than playing on my fiance's PC. I did disable the automatic recording though because I would always hit it by accident when I was trying to do something else. I used to use the mighty mouse but it died on me and I cheaped out with a PC mouce for replacement. If you don't want to buy a new mouse or switch on the right-click ability on the Mac, you'll get used to hitting the Command key for right clicking. My thumb still defaults there when I'm in a fight. :)

I play WoW on my iMac exclusively as well, even though I have a partition for Windows on it as well so I can dual-boot. The built in video-capture feature is excellent too.
That's exactly what I do :o
To be honest, WoW runs
much
better on my iMac than my old windows computer.
