Is there a reason so few games nowadays don't have demos? It seems very simple to do, but I'm not a programmer, so...
Demos, in my opinion, were really prevalent when they came in gaming magazines. Back then (hehe a few years ago) playing a demo was a simple "plug n play." Nowadays, demos are still around but they are more readily available through the respective console marketplace but not as widely advertised.
The problem is that you have to download it and most games aren't small in size. A decent game could be around 1 gb to 4gb. Not everyone has a fast connection speed and you could spend up to an hour downloading a demo you'd only play for 30 minutes. On top of that, demos aren't always refined pieces of work they used to be. Or at least the bugs weren't as apparent and we just took it in stride.
Either way, playing a buggy demo could give off the feeling that a developer didn't care about the product they were releasing and it was less of a risk not to release one at all. (And it was less of a risk for you not to buy a buggy game at all) Maybe lazy developers ruined it too. A mentality of "We could patch it later down the road" could lead to a less than stellar demo.
You could also take into account that a lot of people these days are jaded and feel entitled to a perfect game. (It's my money and I want a well-oiled machine!) Buggy demos are a turn off to them.
Combine that with the advent of youtube channels to showcase a game where they could show, on their ground, a gameplay video to get you hyped and you find the thought of a demo useless.
On the technical side, I'm sure making a demo for people to play is more than just taking a chunk of the game and letting you play it. It seems to easy to do that.
Taking all this into account, I'm sure the devs for a game are pressured. Pressured by publishers to make a hot-selling game. Pressured by their fans not to let them down. Pressured by their co-workers to make this work seamlessly. And by themselves to not make something they'd be embarrassed of. Hanging your product out for everyone to see before it's finished kind of seems scary.
Not to mention, not many people read gaming magazines anymore. Why pay 5 bucks for a single game review you're interested in when you can just look up the review on a gaming site?

Grr... I'm really hating the youtube/Adobe/Chrome bug right now. It's really throwing off my web browsing time.
I can't click on a youtube link for fear of crashing Chrome!

Just be sure to pause the video before closing the tab. That's worked for me so far - closing while still playing causes a crash every time.
