Offtank questions

I'm new to prot, and while I have read a lot of guides on tanking, not many seem to be about offtanking. I'm curious... what do I do during that time when I am not the main tank? To me, my gear/build has to remain the same (as if I am main tanking) so that I can pull 1-2 mobs off the main tank to help mitigate his damage, or else take over if he dies. But when that is not happening, it seems like I should try to be doing some DPS, and that's where I have questions.
Should I drop to berserker or battle stance, and either dual wield, use a 2H, or else still use 1H/shield? Given my one hand specialization in my talent build, it doesn't seem like a 2H is optimal. And given lack of hit gear, maybe I should just stick with 1H/shield and do my shield slams. But, should I swap the weapon for something less tanky and more DPS?
Thanks!

Awesome! So, pickup a slow main hand 1H weapon for offtank... probably with good AP/crit rates right? And my shield needs to be less about defense rating at that point as well, so maybe there is a shield out there with some DPS stats as well?

KK thanks for the help everyone. I guess I'll keep an eye out for a shield that (despite having tank stats) has as much STR as possible for AP when needed.
Right! I don't want to be wearing DPS gear and then not be able to switch to tank gear mid-fight! I agree that without a Fury/Arms spec I won't be doing great damage anyway, but I can at least contribute to the fight (throw down debuffs on mobs and do a little DPS).

Oh, one other question... stances. I guess I drop to berserker if the main tank is generally holding well, and I can try to do a little more DPS. But if the main tank has been having trouble, is it better to remain in defensive and try to stay high on the mobs' threat priority list, in case the main tank goes down and I need to take over, or in case I need to pull a mob off him?
