Berserker rage is usable in defensive stance. No need to be in berserker to use it.
Recklessness on a boss is risky bussiness. Remember the extra damage you take when it's up. If your healers are not on their toes right away it might kill you.

The big three (recklessness, retaliation and shield wall) are on separate cooldowns now.
As for tanking, recklessness is a bad idea, but retaliation can be a good burst for AoE threat.

Also, try to use Bloodrage
after
pulling/charging, it generates threat too.

Now you have the
Heroic Throw
to start a battle with, it generates a high amount of threat in addition to its already high damage.
That's how I start a boss battle usually, if not misdirected I pop Berserker rage and Bloodrage then charge the boss, and while charging I use Heroic Throw then Shield Slam (You can also pop Bloodrage after charging/throwing to generate more threat but I prefer to be on the safe side).

Retaliation is a far more viable ability for tanking. Admittedly, the threat generated is not a lot, it's a white hit, but if you're overgearing what you're tanking and not caring about parries then that white hit is still more threat than... well, nothing. Ultimately though, I wouldn't bother about stuff like this for now, certainly not until you get a little more tanking experience under your belt.
On a more advanced tanking note, I'm not sure if this is still the case (used to be), recklessness was an alright move for tanking stuff you outgear because while it was active, damage shield would always crit without consuming a charge, making it a very powerful aoe tanking skill with a big pack of low damage melee mobs. Maybe this has since been fixed, but don't write it off entirely for stuff you overgear.
