In PvP, you will be doing lots of micromanagement and hybrid play. It doesn't matter what spec you are, you still need to make use if your tools to win. A resto (healing) druid will have to use bear form's mitigation and cheetah form's mobility smartly to survive; and a feral druid will have to use his heals and caster-form snares/roots to survive.
You definitely won't be a primary PvP healer as feral for example, but you'll definitely need to make use of them.
The druid does play out pretty diversely. So if that's what you want, go with it. But know that it adds a level of micromanagement that can be both fun and challenging.
(I'll also tell you from playing a hunter for nearly 2 years that it's not worth it. The class isn't what you'd expect it to be in PvP. Not that it's inherently weak, but I honestly think it could be implemented so much better; the playstyle as-is is clunky and annoying.)

Depends on how efficent you consider a "true hybrid" to be.
Probably the most best druid spec that can fill a secondary roll would be balance spec filling in as a healer. It should be obvious why feral will suck at both caster dps and healing. Balance and Resto have more similiar stat priorities then feral and can fill in for each other much easier. And having played both balance in a healer role and resto in a dps role, i feel that balance in a healer role is better. (this pertains to pve stuffs fyi)
The thing is, no matter what you will not be as efficient as someone specced properly and geared for their spec will be. Ever.
