Rogue.
Rogues have no outright counter-classes. They have classes that they can take from 100-0 while getting a manicure, and some that are competitive and make you work up a sweat, but none that you're completely helpless against.

The problem might be that from 1-80 you are pretty much bound to do Pve (leveling) if you want to ding at a decent pace. So tbh find a class you enjoy Qing with, get to 80, find out which spec is the best for PvP, and learn it.

I had this problem myself. I could not get anything past level 20, then my friend started playing wow. I had a pally when he made a hunter, questing together made it easier to not get tired of my class. We both leveled up to 70 on those toons.
So try finding somone to level with, it takes the edge off getting bored of a character/class
