In general, it's easier to tank with 2h weapons (Rune of the Stoneskin Gargoyle makes getting Uncrittable cake). I think once you get through all the discussions and "what if this" and "what if that" you will probably come to the conclusion that the 2 methods are right about the same in effectiveness. If one is better than the other at the highest gear level, it's not by all that much.
Blizzard is clearly pushing DK's to tank with a 2h weapon, and there's plenty of evidence to say why it's the best. It's more about having to justify why you would ever Dual Wield when 2h tanking is more versatile.... again, you could probably push DW tanking to become equal to 2h tanking if that's what you REALLY REALLY want to do... it's just not as evident.
If you're not sold on one or the other, just tank with a 2h weapon.

DW is worse for tanking.
It's not worse for your survivability (maybe a little more parry haste, but the hardest hitting bosses had parry-haste removed), but it's worse for your threat generation unless you gear heavily for Hit Rating like a DW DPS would, which means you're not gearing for Stam & Avoidance (which in turn makes you far more squishy).
