Weapon wise, you're probably not far off. Widow's Fury is a definite upgrade on the grasscutter so get that chanted and in the offhand. Greed is probably towards the lower end of MH weapons but is still decent.
As far as the spec goes the cookie cutter DOES do more DPS than other specs. Fist/Sword is fine but you need to spend the rest of the point correctly. If you're dodging attacks as a PVE rogue something is very wrong. You're generally higher health than you're target too, unfair advantage should have full 5 points.
What cycle are you using? Until high gear levels (i'm largely 25 man geared and only just made the switch) the Serrated Blades version of combat (7/51/13) should give more DPS than the Lethality flavour you're using.
Lethality seems to favour a 3 finisher cycle (generally 3or4 slice/5 rupture/5 evis) with Serrated blades working better with the old 2/3slice/5 rupture build. If you take the 3 finisher cycle look to cap expertise (tho try and avoid gemming for it) as a dodge during a (fairly long) 3 finisher cycle can really mess with your mojo.
As said tho, get on elitist jerks, get the spreadsheet (it works in open office from
www.openoffice.org
if you don't have excell) and play around with everything till you stop getting better DPS figures. Any amount of advice won't get you closer to optimal dps than the spreadsheet would. I still go through the messing of checking all the cycle/obvious glyph options on pretty much all my upgrades.
