Not used. This is exactly why Blizzard decided to keep our Auras on the GCD - so we don't change our aura a moment before an enemy's spell goes off, to adjust resistance appropriately.
To answer your question, aura dancing is exactly this switching of a certain aura, depending on what kind of damage you are about to take. You see the mage charging a Pyroblast at you - put Fire. You see something bad, nasty and frozen - turn Frost. Shadow Priest? Shadow resist. And on and on.
Now, we can't really dance, because if you use your GCDs for changing auras, you won't have time to cast offensive/defensive or healing spells...
Of course, some fights allow it, and it should be used...

still use it. If we're closing in on a fire mage casting a
Pyroblast
and
Hammer of Justice
is on cooldown, by all means switch to
Fire Resistance Aura
, then back again after it hits.
