Jumping while in the GCD is great advice. When healing this fight, I usually time my jumps as though it was a new cast (ie, in the latency portion of my cast-bar so the cast gets off AND I jump immediately afterwards).
There is a lot of damage going around, but it's not so great in normal. I'm pretty sure she still does the Frontal-cone breath on the tank, which needs to be dispelled immediately. Other than that, as long as everyone else is jumping, you should be fine. I also don't understand why you said you need to be standing still to cast Holy Shock. The point of the spell is that you don't have to stand still. Cast it while moving or jumping.
Other than that, it sounds like your tank was probably taking too much damage and your dps was too low. So, a lot of things wrong.

She has an enrage at the end (think at 10%) also. On my priest, I dont care much about getting rid of freeze debuff in these last moments and just bombard the tank with heals.
On my pally, i blow 50% dmg reduction and after that LoH if healer can't keep me up.
Be sure to cleanse the debuff her breath leaves asap.

Yeah the strat for that is basically to wiggle around while healing/dpsing/tanking, I stood there and jumped since...well...I like jumping and prot pallys have no cast times.

better is just to tap forward or backward, jump is longer and you cant do nothing during it, so tap forward or backward maybe turning is enough, so cast fol,tap,fol,tap,fol and maybe it will work fine for you :)
