Health or Avoidance Stats for Tanking?

So after the initial rush to gear up for Defense, I'm now focused on getting my Health up. Sitting pretty at 27.3k health unbuffed, and aiming for that magical 30k mark (just because, no real reason). Another tank in my guild is aiming for more avoidance stats like Parry, Block, and Dodge. I was wondering which is prefered for Heroics and/or Naxx? My guild is going to be running 10 man Naxx soon and I'll be up for Tanking or Off Tanking role.
Here are my stats:
27.3k Health
552 Def
60% Armor
18.78% Dodge
15.83% Parry
22.91% Block
around 820 Block Rating which jumps to 1k Block Rating with buffs and tanking.
Should I concentrate still on more Health or switch to getting my avoidance up? My thinking is getting more health just as a buffer. Avoidance and those other stats will come as I upgrade gear from 10 man Naxx. Thoughts?

Well thats also a factor. I'm a JCer and was wondering how to Gem. I've mainly been focusing on more Stam and will be making
Solid Dragon's Eye
Prismatic Gems soon to replace my non blue sockets. Should I start geming other slots for more avoidance stats? I see a lot of the top geared warriors on my server with those gems.

Your stats are good for even starting Naxx25. I, personally, am a fan of effective health (stack stam, armor, and block) but it has its ups and downs according to the encounter. The only one I can really think of that having a ton of effective health isn't too horribly useful on is being a soak on Patchwerk.

it's been said many times before, but good tanks do NOT have only one set of gear. gear for the encounter. currently, you are fine for many fights, but your dodge and parry are quite low for OT'ing patchwerk.
i have 4 gear sets in my closet gnome: normal raid set, avoidance set, block set, and a 5-man set. you just can't say one stat is better than the others; it completely depends on the upcoming fight. with current content, i can't think of a fight where i need a max EH set, so i don't have one set up. that might change in 3.1, but who knows.

Thats what I thought. I was use to having to carry around Resistance sets for MC and BWL, but I'm glad they did away with that. I don't have "another tanking set" as I'm still working on my first tanking set right now. I should have enough badges for the Heroic Gaunts, so that should boost my parry up. Remember, its just 10 man Naxx, I'm sure others have done it with far less.
So, Def Capped + 30k Health + 60% Armor Mit + 60% combined avoidance should do it right?

30k hp unbuffed is a ridiculously high goal to start 10 man naxx, as is 60% avoidance. 26k + 45-50% are enough to start.

I think your gear is fine for 10 man naxx. But ya, when your off-tanking Patchwerk on 10-25 mans, you may need some avoidance to withstand the hateful strikes that come in your way. The raids in Wotlk doesn't need that much avoidance anyway except for Sartharion (2-3 drakes up) or Malygos and thats pretty much it. EH in my opinion is still the way to go for many good tanks.
