They all go crazy and turn on one another slaying themselves and saving the Horde and Alliance the job? No one knows unless they work for Blizz and they can't tell us or they'll be sued so fast it would make they're head spin.
Edit - Or maybe they are just left leaderless and someone like Kel'thuzad (not him though 'cause he's dead, but someone like him) takes control of the Scourge.

I bet the Burning Legion will see it as a chance to take control over the scourge once more.

If the lich king dies...
He makes like a shammy and self-rezzes.
Or else, he resurrects as a ghoul for 45 seconds?

He mentaly controls the scourge so maybe they'd all just drop dead (again).
That's what I was thinking initially. But come to think of it, we don't really know how the Scourge operates. I guess the two big ideas are:
The Lich King controls every single Scourge unit individually. Seems unlikely. But in this case, if he dies, all of the Scourge "dies".
The Lich King is only the first step. His will (or the will of his minions) raises a particular Scourge unit, and the unit is on its own from now then. Its mentality seems to be replaced by one the Lich King desires, but other than that the unit operates on its own - it "feeds", moves, and to a certain extent thinks on its own. And by thinking I mean "processes "appropriate" thoughts" - kind of as if the Lich King has given the undead body a new identity.
From the two, the second one seems more likely to me. But then, there are Death Knights like Sir Zeliek, who is literally controlled by Kel'Thuzad, but keeps his free will and can talk and think like a paladin, regardless of what Kel'Thuzad does with his body. Although that could be just something KT amuses himself with...
I don't know. I think skeletons and most abominations will just drop deader. The "higher" levels of Scourge units will probably become Forsaken - will gain free will. What they do with is entirely their own choice now - some may not join Sylvanas, some may try to create a new Scourge, some may decide to end their new lives.

The scourge would fall down dead technically, and in theory. The Lich King
does
control every scourge unit, though not directly as you would a puppet. Simply steer them in the right direction without constantly being in their minds, despite having the magical and mental power to do so. You could call it instant hypnotism I guess. Reanimate dead body, "instant hypnotize" and give the walking corpse a simple purpose, i.e. walking corpse does your bidding without your constant control.
That's the most reasonable explanation I can give.
I seem to recall while playing the RTS games that the spread of the "plague" was by placing out magical artifacts or something of that sort. Probably used as enhancers or relays of the Lich King's power. Either that or they were vesels of trapped magic which the Lich King had prepared to execute what needed to be executed.
No matter the way or the reason, there would be a significant change, and blizzard better know a bulletproof plan for explaining the whole thing once it happens. I don't want another retcon.

Lich King was a shaman, actually. I found that out in the Howling Fjord when I was in the spirit world and...
*cough*
...there was an incident involving myself, and Arthas. No need to get into it.
Also, if I recall, Illidan and Arthas tangled before. Before Arthas became the Lich King, before he got Frostmourne?
Yeah, that...that didn't end out too well for Illidan.

The people saying they'd drop dead don't know what they're talking about, do the shadow vault quests and you'll see what happens when the lich king doesn't have influence over them anymore.
Additionally, too many people in this thread missed the whole Black Temple incident, where Illidan was killed by Akama and Maiev.
