Most fun instance pre tbc... Shadowfang keep. The way it is designed is just quality. You can see that it has been well thought through and it is such a realistic construction. Also the lore behind it is somewhat lacking, but still cool. In tbc I'm gonna say Arcatraz. In normal mode back when we were doing it for our very first kara attunements. It was just so much fun. Every pull needed a wee bit of tactics and coordination, and it was a nice soft bridge into raiding.
I also love Karazhan. I hear people getting bored by it. I find that hard to understand. I can run kara countless more times. Even though I have two characters exalted with the violet eye.

I haven't done much in TBC (Ramparts was fun, but far too short while Blood Furnace was just boring), but my faves from old world were Uldaman (loved tanking the golems and the enormous trash pulls of scorpions), Sunken Temple (loved the fight with Eranikus and Essence of Hakkar) and Scholomance (that first room was spot-on for knowing how well your group worked together).
