Nagrand was the recommended Oceanic PvE server at the time. Being a newbie I was scared #*!&less of PvP.
I then started a few toons on Frostmourne (PvP) because some RL friends started playing, and I didn't have a very good time of it. Being ganked near ruined the game for me.
So back to Nagrand I went. :)

Started off on Alliance SilvermoonEU, because a friend was playing on that realm. After a year, I quit and deleted the account.
I later came back to Horde SilvermoonEU, quit when my guild moved to NordrassilEU.
Now I'm back again, on Alliance NordrassilEU - to kill my former guildmates (atleast 'till I can be bothered wasting £45 on transferring my horde off Silvermoon.)
PS. If you ever see a Silvermoon Horde - leave it be, they're an endangered species.

Currently I'm stuck on Baelgun. I originally started on Blackhand with some people I played NWN with (on the old Earthspur PW server). When NWN pretty much wound down some went to WoW and I went with them much against my better judgement. Blackhand was a pretty densely populated server and they offered up free transfers to the newly-created Baelgun server so we went.
And while I don't play with that group anymore (they went in for the hardcore late-night raiding which I'm just not interested in), I'm on Baelgun with a bunch of other RL friends, some of which transferred characters over.

Exodar (US). PvE, medium population at the time I was selecting a realm, and I liked the
name
(all I had to go on since I knew nothing about the lore/backstory of the game, 'cept that Orcs once invaded the Human kingdoms in the RTS' story). Haven't yet regretted my server choice.

Rolled my first toon on Madoran because that's where my bf was playing and I didn't know anyone else who played at the time. She's almost to 70, so I rolled a new toon on Magtheridon to be able to play with more Jamaicans :).
I like both servers even though Madoran's battlegroup is a tad bit sucky imo.

You don't choose your server, your server chooses you!
Maybe not a direct quote but close enough. I let Blizzard chose my initial server and have kept my toon there ever since.

Some people in my Horde guild on Baelgun decided to make alliance characters on a PVP realm. I think they randomly picked Detheroc. My fiancee and I ended up staying there for good. It's a nice server, but with there being 4 horde for every alliance, it's pretty annoying. When events happen out in contested zones, it's pretty hard to get anything done.

We chose Stormrage (US) about an hour after the game launched. It was sort of arbitrary, but it met a few conditions we'd previously set on the guild forums:
An East Coast realm. (We have people in the UK, so US Eastern is a little more convenient for them)
A PvE server. (Our previous game was Shadowbane, and the whole ganking thing had gotten old.)
Low population. (We figured it would be more stable. Of course, when the game launched the servers were in such flux the rankings were basically meaningless.)
The first person who managed to get logged in was to choose a realm and then let the rest of us know. The guy who ended up making the call went with "Stormrage" because it was easy to spell.

My friend was in it.
The population and economy were pretty good (and still generally remain so).
The community, despite being drama-prone, actually has some nice players if you look hard enough.
Lack of "Anal" stuff in the trade channel.
