First of all.. damn, that was hard to read!
Second; noone's really sure what benefits Inscriptions will have, the same however, counts for Blacksmithing.
Tbh, I'd wait things out for a bit, see if Blacksmithing will suit you in WotLK. And if not, you can always change your profession to something you do like.
Just don't do something you might regret later.

I cant imagine seeing a guy sitting there in full plate armor carefully inscribing a scroll, seems to be more for classes like a Mage, Warlock, or Priest.
So no warriors should not use inscription, stick with mining and blacksmithing, those are decent and respectable jobs for a big bulky warrior.
Leave flower picking and poem writing to the clothies.
p.s.
you should also avoid any profession that requires thinking such as engineering or enchanting. Thinking is what gets a warrior killed.
Leave RP'ing to the RP'ers. Seriously this has nothing to do with the game and its mechanics.
Some of the inscriptions are up on wowhead already, take a look. If some of them seem appealing to helping your play style take them. I however am looking at the extra sockets you get from being a blacksmith. This out of all the professions at this point seems to have the greatest benefit to a warrior.

Shall I mention that Death Knight has Runeforging as class skill?
You always can leave your carapace in hall and go in room dressed more ingeniously for paperwork.

Keep in mind various professions grant special abilities when LK is released, mining will be best suited to tanks.
