I'm in the same boat as you, Arrow. Tankadin just beginning to tank Outlands instances. From what I've learned from other paladins, it's a balancing act.
At level 61, 150 spell damage is pretty high. Consider the fact that a reasonable amount of SD for tanking Karazahn is ~250. My guess is that you can scale down the SD at lvl 61 in favor of some stamina. You shouldn't really have trouble with keeping aggro, even with 50-100 SD. If you are, you can always throw some wizard oil on your weapon.

It's good to have multiple sets, as it is good to have multiple blessings
if you're lacking in threat, go with SD with BoSanct and Salv the DPS
if not, go with stamina and BoK and Wis/Might the DPS
generally, I like to have much spell damage as possible and get through asap

at lvl 64 I am crit immune for up to lvl 67 mobs through a couple resil pieces and defense, however I run with mostly lvl 70 guildmates (power lvling a pally for raids) so I have exceptionally well geared healers and DPS, the only way to keep aggro is to pile on SD gear and forsake my awesome tanking gear lol.
If I was running with pugs my +def gear would be fine with +80ish SD unbuffed but I'm running with full kara/badge/t5 geared warlocks and rogues so I need 200 SD unbuffed to hold the threat (and boy do I hold threat even through 2 SoC exploding every few seconds) which leaves me open to a lot of dmg taken but I have a healer with +2k bonus healing that can easily heal through any dmg I take.
But if I were you I'd get the SD trinket from zang quests, a SD sword with wizard oil and wear as much "warrior" gear as you can get.

Ok, so here's my question:
A number of Outlands quests give you a choice between armors as rewards. When given the choice between a clearly Paladin piece and a clearly warrior piece, always take the Paladin one, right? They're usually exactly the same, except the Paladin one may sacrifice some +stam for +int and/or +SD.
I only ask because it seems many folks are advocating warrior pieces.

If you can find drops or quest rewards that are clearly "Paladin tank" in nature, take them. Warrior gear is going to have Strength on it typically - which, TBH, is
waaaaaay
down on the priority list of stats for a Paladin currently as it just increases damage absorbed by your shield.
