We get
Charm of Swift Flight
(same as Riding crop for our flight form) on our Swift Flight Form
quest
.
Hopefully, the "flight form speed increase trinket" will be converted into an enchant just like crops and carrots.
*for the less knowledgable: the "carrot" and "crop" trinkets have been converted into enchants of sorts that enchant a mount directly (yes, the mount summon item)*

I know that was the original "new" implementation of them, but now that mounts and vanity pets aren't going to be objects in our bag (they're going to be in our spellbook), how would we apply them?

Simply apply them to the "summoning spell" of a mount. The same as know, only you don't apply the enchant to the item in your bag, but apply it to the spell in Pets and Mounts section.

I haven't checked in the last build, but once wotlk come i'd advise you to enchant the mount before "learning" it. I'm running without speed enchant in beta because you could not apply speed enchants to a mount in the pet section (and bought the same, applied the speed enchant to it, and then could not learn it because i already knew that one).
