2h spec applies to all melee attacks, the only thing it doesnt effect is your spells (death coil, death and decay, icy touch, etc. - anything that doesnt use your weapon).
as to the second bit - I'd go after 2h spec over bladed armor.
let's say at that level you have 8k armor and a weapon that does 800 damage with a 4.0 swing timer.
5/5 bladed armor gives you 200 attack power, which results in 57 extra top-end damage.
3/5 bladed armor gives you 120 attack power, which results in 34 extra top end damage.
2/2 two-handed spec gives you an extra 4% damage dealt, which brings the 834 up to 876.
Overall with the latter setup you're getting 76 extra damage, while full bladed armor only gives 57.
I know it is hard to judge the values when beta is not yet complete, but I think your numbers might be off. For instance, my level 70 warrior has 9k armor in a mix of PvP and Pre-25 man DPS gear, and the top end - let alone average damage - of the highest level weapon I could find on Wowhead,
Titansteel Destroyer, is only 731. I think it is plausible you can see 12k armor in DPS gear at level 80, although certainly raid dropped weapons will meet or surpass 800 top end, and maybe even average.
Of course, due to the nature of AP, the bonus of Bladed Armor is further increased by Two Handed Spec, as you demonstrate. So, I guess I am agreeing with you that - in this limited scope - 2/2 2HSpec and 3/5 Bladed Armor nets the largest bonus. I just thought your numbers were inaccurate.
