Making a new character... thinking about a rogue. But, are rogues still way overplayed? Will I be able to get into any PvE, or is it going to be pretty much harder than any other class? Or will I be on the same platform as any other non-healer/Tank?

If you want to be ensured of being able to get groups make a hybrid like Pali or Druid and you can respec and switch gear to fit the needs of your server

If your primary concern is getting into groups, yes, roll a hybrid and keep a second/third gear set.
For example, roll a druid, keep a healing and feral set of gear so you can heal or tank or dps instances as necessary. Roll a pally and keep tanking gear (and maybe healing gear) on hand in addition to dps gear. Roll a shammy and keep dps and healing gear at the ready.
You *will* get into groups that way, unless you're horridly undergeared and/or unpleasant to group with.
And yes, Rogues and Hunters are still the most-played classes (or at least seem to be, which is the same thing as far as people forming groups are concerned), but since they bring a lot of utility along with their DPS (Improved Hunter's Mark, Sap, Traps, Rogue's armor-drop skill, etc) they're desirable DPS anyway.

every server is overpopulated of hunters/rogues
usually
but if you excel at what you do, you will get into more content
