In terms of getting ready for wrath, If you can't raid with the paladin you're better off leveling the hunter. Simply put, the pvp gear won't do you a hell of a lot of good on the paladin, it might last longer, but you'll still end up replacing it eventually. A second character on the other hand affords you some nice benefits.
With a second character you get a second hearth so you can get to the AH more (since mail is instant within your account it doesn't matter which character buys things :P), 25 more daily quests, another pair of professions, and most importantly a change of pace.

My first to 70 was a hunter. It's a fun class, and I have a blast on him for farming and soloing. On the other hand, if you think lfg is terrible because you have to spend money, well, you won't be lfg too long before you give up on it as a hunter. Hunters are a dime a dozen on most servers and even if you do manage to find a spot in a group, you will most likely be fighting the shammy or other 3 hunters in your group for items. (Why am I fighting shammies for gear, I will never know...uh, ok, sure, you need that epic agility item /sigh).
In my opinion, in the long run, you will be happier with a class that can change things up a little better. Shammies can dps, heal and can actually take a hit or two when geared well. Druids can heal (heck, I am feral and still heal isntance xD ), tank and dps in the same spec and can do it without leaving the instance.
On the other hand, you have a class that can tank and heal, but not really dps with the best of the dps classes. If you wanted to lvl a hunter, might I suggest that when you get to end game, increase your utility and spec surivival with some talents in BM to help keep your pet alive long. I can't tell you how annoying it is to have my traps be resisted, then when they stick, not last long enough.
Dps is dime a dozen, but if you add some nice utility with cc, you will most likely be invited back because you were able to add so much more than just dps.

Here's my thing, with WotLK in mind. I figured that I am much better off not worrying too much about gear and concentrating on one, making as much gold as possible before WotLK comes out and two, leveling as many of my alts to 70 as is reasonably possible to increase my gold-making potential. Currently I have a level 70 Hunter
(LW/Skin)
, Warlock
(Enchant/Tailor)
and a Shaman
(JC/Mining)
. I also have a 68 Rogue
(Alch/Herb)
that I'll be getting to 70 soon. The three 70s have their epic flyers to maximized speed when farming, questing, doing dailies, etc. Other than that I just grind dailies if I feel like it, or do overland questing if a character has some to do.
Anyhow, I'd say level alts to 70, get them reasonably equipped, and farm your butt off until WotLK. Getting the best gear possible now is a waste of time since it'll probably be bettered by WotLK greens. ;)

i would say level up your hunter
they are great at farming
if you do not do raids your gear will be replaced in WTLK
