The only time you should socket strength over Haste is if your below 480ish IL. After that Haste should give higher values.
But I'll sim my Ret to check. She is around 528 or so IL.

I dont quite agree with socketing Haste over Strength.
Im currently at ilvl 520 (ie basically LFR capped on gear) and so far, simming my character has constantly given me a higher value on Str vs Haste. Are you talking about gearlevels past that or am I pulling wrong numbers from Simcraft somehow?
Point for point Str is usually higher compared to Haste.
Keep in mind that secondary stats are present in double quantities on gems. So the question isn't "is Str higher than Haste" but "is Str more than twice as good as Haste"? The latter is rarely the case at item levels past T14.
The Jewelcrating speciality gems (
Bold Serpent's Eye
Quick Serpent's Eye
) are an exception. Because here the question is "is Str more than 1.5 times as good as Haste"? That's somewhat easier to reach especially if you consider socket bonuses and replacing hybrid stones like
Fierce Vermilion Onyx

My Simcraft Scale For Current Gear:

With the scale you can see that Str. Has a Value of 4.38 and Haste has a value of 3.39 which is less then a 1% different in the stats. So no its not going to be worth it to gem pure Strength Gems over gemming haste.
And don't forgot Haste effects everything on Ret from cool downs to weapon swings. When Strength only effects AP and the amount of SP we get from AP.
Hit is a little high on my scale because I don't think Simcraft factored in my Racial Bonus to Hit so it thinks I'm under the soft cap.

That is strange, I get similar weights for my gear, but somehow, my Serpents Eye's need to be STR over Haste. I would have expected MrRobot to steer more towards Haste on those then...

I don't trust Mr. Robot on that point it will always throw you off on your gemming. A lot of toon builds have very fine lines as to when you swap gemming. That's why its a good thing to Sim. your toon.
Another thing to note is that if your below 485 or so IL Strength is better then haste.

I agree with you on MrRobot, so that's why I sim my toon to get the weights and then use those in MrRobot to get a gemming/reforging advise. That way, MrRobot's advise should be pretty spot on (in theory anyway)

I'm starting to think that mining and blacksmithing might be the best professions for paladins, because it allows us to craft our own armor to meet the ilvl requirement for dungeons and heroic dungeons, what do you guys think?

What do you mean?
What I need is some higher item levels and it seems that the only way to get them is by purchasing items with a higher item level for honor points, in order to unlock heroic raids.
But if I could make some ilvl 640 items with blacksmithing, it would be enough meet the requirements for heroic dungeons and I wouldn't have to spend my time in battlegrounds grinding honor gear.

No one can tell you how to play your character or what professions you want; you know that, so make the choice. Blacksmithing and mining work fine.

I doubt anyone is asking is asking for that.
I was asking for ideas on professions for paladins that would serve well with the end game content.
Some of the suggestions are good but I personally think the best would be blacksmithing because of the ability to socket items as well as crafting your own gear, and mining so that you can gather your own resources.

There isn't a "best" profession. It depends on what you're looking for. Personally, I'm rocking enchanting and jewel crafting, for a few crafted items and an easy time with the money-cost of enchants/gems.

So I managed to get my mining and blacksmithing to maximum level, but when crafting ilvl 640 epics, it requires 100 truesteel ingots, and the amount obtained on a daily basis is pretty limited. I was looking forward to crafting three pieces of equipment right away, but i'm a bit disappointed how they changed it with the cooldown system.
