Jade Temple is the first Dungeon?
Good to know. Then 358 may be what to shoot for and stop.

Gearing up for MoP is super easy. Just quest to 85 and stop. It might take you 2-3 minutes to do some of the quests, but after an hour or so most, if not all, of your gear will be replaced with stuff that the 25m Heroic Raiders will wish they had for DW

I wouldn't go this far :P
Yes gearing up is more or less pointless because the first zone alone will replace just 'bout everything you have. But if you really are decked in DS heroic gear, then that gear will last you.................... till the second zone.
Jade forest replaces all your non-DS-heroic gear, whereas Valley of the Four Winds is the final nail on the coffin for cata gear, that zone WILL replace everything you got up to and including DS heroic gear.
Again, the sole exception is Trinkets, I've been keeping tabs at the quest rewards for MoP and so far haven't seen a single quest reward that gives a trinket capable of replacing stuff like Vial of Shadows (Reg and heroic) or Bone-link Fetish.
Much like it happened on cata, Deathbringer's Will Heroic lasted me all the way to 85. Chances are my Bone-link Fetish will last me too.

So far the people who copied over toons with Heroic DS gear have only been replacing 4 pieces in Valley of the Four Winds which has 4 Blue Quest rewards; everything else is tuned for people coming in who haven't been running HoTs. Heck, in Dawn's Blossom, the second town in Jade Forest, there is a vendor who sells a full set of 272 green gear for people to help them get out of the green Cata quest gear.

I approve of this feature.
I had no problem transitioning from Vanilla zones to TBC zones, nor from TBC zones to Northrend, and with my main I had no problems moving from Northrend to Vashj'ir/hyjal, but MY GOD did I had problems with alts.
a toon (Specially clothies) moving from northrend to cata on greens is gonna get raped. Just killing 1 mob alone will require cooldowns to be used, and will end with you either dead, or almost dead.
If there's a vendor that sells crappy MoP greens (That happen to be miles better than Cata greens/blues), then all the better.

in question; sells items based on your class; he had both spell power and agility based leather, trinkets for both specs, rings and a neck piece, a cloak and weapons, in the case of a monk he had a mace, axe, staff.

272 isn't very good. By the time you're finished with Cata you should have better than that anyway.
I just checked one of my toons that I leveled to 85 and stopped. iLVL 318. The lowest piece was 272.

Edit: There is another one in Valley of Four Winds named Claretta, at the first place you visit; same set of 372 gear.
