Both are strong buddies to a Priest. End-game, quite frankly, it doesn't matter much... As the only thing involving 2-players is Arena's 2v2 bracket. There, neither Priest/Warrior nor Paladin/Priest are too strong...
So, for levelling. As a DPS, both Paladins and Warriors serve as good partners to a Priest. However, Warrior buffs are nigh useless to a Priest; though Intervene, AoE Spell Reflect if Protection and a fair slow by Hamstring, and the ability to cover terrain better, are a Warrior's strength.
Paladins offer awsome buff synergy with Priests, excelent support cooldowns (Warrior cooldowns tend to be around saving himself), but diminshed mobility. However, with all skills cooling off, Paladins tend to be comparativelly less mobile than what a Warrior could do.
At the end of the day, neither class completelly outshines the other, and both are strong enough not to be "wrong" choices. Though my comparison above has pointers, you won't go wrong picking a Paladin or a Warrior, especially since Cataclysm made levelling a breeze - the reworked talent trees really make up for much smoother levelling.

All tanks are viable tanking any content. There are, in WoW, three lines. Impossible, Viable and Best. Impossible and Viable are usually constant through an expansion. Best is what shifts. Rolling what is "best" now will change in the future.
With that said, all tanks can viably tank anything. Some niche abilities might give an edge to some tanks in
certain fights
, but you'll be able to do everything playing any tank.
