Melee dps on hunter weapons is almost entirely irrelevant. It could have some minor value in PvP or when soloing, but its utterly useless in PvE if you are doing dungeons or raids. Stamina should only be a very minor consideration for PvE.
All you should really be interested in is which gives you the best combination of Agility, Crit, Haste, and Mastery (and Hit if you can use it). And you shouldn't just add them up either. Agility is much more valuable than the other three. You should also factor in available weapon enchantments if you plan on enchanting.
And just to make this easy for you... if you plan to do end-game PvE content at level 85 you absolutely want to use a 2-handed weapon and not 2x 1-handers. There's no enchant in the game for 1-handers that compares to

. Your 2-handed weapon would have to be incredibly inferior to your 1-handers to make it not worth using.

The two onehanders you linked are better in my opinion than both twohanders. The hit rating makes up for the 1 agility and 8 haste loss. The weapon DPS itself can be ignored, same with stamina.
As others have said, at endgame level twohanders are vastly superior to two onehanders. My 346 heroic twohanded weapon beats dual wielding 359 agility swords (from Valiona and Theralion). The available enchants at endgame make this gap even wider.

Yeah, I was thinking the same thing... for 1 agi, I'd gladly get the +hit instead...

It's pretty simple:
Compare
.
That's what the tool on wowhead exists. If you are going to enchant/gem the item, add them and see the result.
In your example, 1 Agi + 8 Haste + 10 Stam vs 9 Hit. Then it's up to you to decide. Would you prefer some extra survivability and some haste or a lower chance to miss?
I'd go with the lower chance to miss.
On higher level, most the time a 2h will win. For example...
this
. Elementiun Poleaxe (blue 346) vs 2x Heroic Fang of Twilight (epic 372).
It ends up being 50 agi vs 18 crit + 18 mastery. And we all know who wins here, right?

For pve you'll almost always want a 2h once you hit max level, unless say your 2h is ilvl 308 and your 1h's are 359. The itemization is just better, and the 130 agil enchant is too good to pass up.
For pvp...you may be able to get away with 2x 1h's if only to put a
Weapon Chain
on one if you find you're having problems with it.
You can use weapon chain on the two hander... and, starting from 4.1, you won't need to have a weapon (off hand when disarmed) to Deterrance (the reason people used DW in PvP), so, I doubt it will be worth it.

When you are using a hunter, the melee weapons are mainly for their BENEFITS. If theres a 2h sword that gives u 20 agility, and 2 one handers that give u 8 agility each, take the 2h. Of course, If you really think you want to do some killing melee style, pick up the 2h. It (in total) will give you the most effectiveness out of Raptor strike, which only uses your main-hand+any other melee moves that dont point out, "Only usable for dual wielders" Dont defy my word. '-' I'm watchin u.
