Flask of Steelskin
is definitely the go-to flask.
The food is up to you, really.
We have
Parry Food
and there is
Expertise Food
and also
Hit Rating Food
and the immensely popular
Mastery Food
There are also basic +agility and +strength food (the latter being incredibly easy to stockpile hundreds of) and also weaker 60/60 versions of those as well.

Oh had a thought...
When a tankadin eats of something that provides
"... 90 stamina and 90 in another useful stat..."
, the useful stat it invariably chooses is Dodge. So at least the Devs think that tankadins should subsist on dodge food.
I let my choice fit the situation (food is cheap and easy to make)

I use 90 Mastery Food. 225 Mastery Elixer and 900 Armor Elixer

I carry 2 stacks to every raid. Sometimes (depending on if we one shot hardmodes or not) its defiantly less expensive than flasks too...definatly more expensive for progression tho -_-
I use 90 Mastery Food. 225 Mastery Elixer and 900 Armor Elixer
Depending on what you are fighting you should be using different combinations of food buffs.
Max Avoidance (a fight like Chimaeron)
Flask of the Winds
Blackbelly Sushi
or
Mushroom Sauce Mudfish
Max Survivability with unavoidable damage(a fight like Halfus)
Flask of Steelskin
Lavascale Minestrone
Max Survivability with Magical damage (fight like Nefarian)
Elixir of the Master
and
Prismatic Elixir
Lavascale Minestrone
Max Survivability with physical damage (fight like Omnotron Defense System)
Elixir of the Master
and
Elixir of Deep Earth
