you can only skillup from disenchanting to 70.
then you will have to figure out how to determine if greens from AH are worth buying (for the purpose of disenchanting). if you can do this, then you can sell the dust/essence to get your money back from buying the greens and have mats to spare, which you could use to get skillups. dont forget to put the enchants on armor vellums and sell them on AH (i.e. dont waste the mats by re-enchanting your own gear)
Edit: and leveling a crafting prof at the same time is just a nice way to use the items you made while leveling letherworking... i wouldn't make items specifically to disenchant them (because AH greens are going to be a better deal).

It is possible, not counting the oddball mats that like to show up. You will have to make some ilevel range items with the LW even when not worth points (or AH buy em) at certain areas of enchanting.
If you have a skinner to supply the leather, or a nice expendable bankroll, it really wouldn't be much different than the tailor/chant combo. Make item, de item, chant other item, repeat.
Just an off note, I would not recommend this for an only or highest level toon on a server.

As someone else mentioned, you won't get any skill points from just D/E-ing after the very early levels. If you mean using the dust/essence you get from the junk you make with LW
and a boatload of greens from the AH
pretty much sums it up. You'll need a big boat - there's no way that just the stuff you make from levelling LW (or any other armour crafting prof) will give you enough mats to keep enchanting at the same level, you'll need other sources.
It's almost never cost-effective to keep making your own green gear past the point it's useful for levelling that crafting skill either just to D/E it, much better to spend the gold on cheap greens and/or ready made mats.
Up until level 200-ish it's dirt cheap, after that...yeah, good luck! You can offset some of the cost by making scrolls that you can sell for a big profit, though that might require some hunting after the rarer recipes - see here for a good list:

Hello, as the title suggests, I'm asking whether its plausible to level enchanting through disenchanting.
I have a character whom I'm going to level leatherworking with, and I decided to pair enchanting with it. I was wondering if it was plausible to DE the stuff I make with leatherworking and a boatload of greens from the AH all the way to say around skill level 400.
If anyone could elaborate on this, it would be greatly appreciated.
I doubt even questing AND LW will be enough to get the mats to level enchanting. I will also add that you are better off with skinning and enchanting. The cost of mats are almost always higher than the items they create (on the AH).. so auction your skins, buy greens with the gold, then disenchant.
If you are talking about getting skillups from disenchanting... that ends at 70.

The short answer really is no.
I have leveled 3 toons to 85 so far. One of those toons is a tailor/enchanter, and one other is a JC. I have both the JC'ing and tailoring at 525, have DE'd every single crafted and BoE drop from 3 toons, as well as the quest rewards from my enchanter, and I ran out of mats at about 515 or so.
I "probably" could have made it to 525 if I had disregarded everything and only leveled enchanting the most efficient way possible, but I did use a few mats to enchant toons gear, and also skipped some of the more worthless enchants to make scrolls that would sell at the higher levels. But remember, that was with 3 toons feeding me for mats, not just 1.
