Something I was actually convinced to do was to always reforge to dodge so that means that you will more likely not hit the cap.
Your dodge is fine IMO but then again I'm splitting my stats between Stamina and Agility. It just really depends on your raid comp? I think that if your healers are under geared I'd probably go with stacking stam to help out your healers if they having a hard time.
Edit: Probably want to get rid of that meta gem on your head gear get the stam one

You're fine for heroics.
I tank them in full cat gear with ~30% dodge and 128k HP.
Cleared every heroic like that with my girlfriend healing, no trouble.

Back with some more personalised advice.
First and foremost, i hope you have read the post i have linked above. Anyway:
I would respec if i was you. Drop Feral Aggression (slightly higher aggro and a small DPS buff to all melee
DPS for the first 12 seconds of a fight, and it can be provided by 3 other specs -> useless) and fill up Perseverance (you did complain about taking damage. A lot of damage in certain 5-mens and lots of raids comes from magic sources), and King of the Jungle (threat on demand. A larger damage boost when you actually need more damage is much better than a much lower passive damage buff.)
Your gear looks somewhat fine. No Str items, no outright bad gems. You could however pick some gemming path and follow it, now it looks rather chaotic and random.
Learn to use your cooldowns more often. They are not "emergency" buttons. They are our tools to
prevent emergency
.

What are your opinoins on
Tia's Grace
for Tanking?
Well, considering that one and
Fluid Death
are Pre-raid BiS... yeah.
BTW... Agi > Dodge, for normal mode raid gemming. Thror's second set of gems is best until you get to Heroic raiding.

Omnitron System was difficult, and we spent about 1 and a half hours there, highest we had got was 60%.
Sounds like you are pretty close to the 'click' where things just mesh and you guys make huge progress, good luck!

Did Bastion of Twilight today, 3 straight hours, and didn't clear any bosses (Omnitron System and Magmaw). Was DPS ing Magmaw, because the other Tank was much better geared than me, and they said only one tank was needed. Omnitron System was difficult, and we spent about 1 and a half hours there, highest we had got was 60%.
Omnotron is a trial and error kind of fight. Once everyone knows how every single boss works and adapts to it, it becomes a breeze pretty much. An important aspect is to
NOT dps while a shield is up
! That includes dots and bleeds.
I have dpsed in tank spec quite a lot on Magmaw. Especially in early cata. Just taunting the boss when the tank gets omnommed.
Edit: for Arcanotron, it's quite handy to have a stopattack+skull bash macro ...
