If your prepared to put time into a profession then I would suggest making the Darkmoon Faire cards through Inscriptions. The margin you make when you sell a deck is fantastic, the downside though is that you do need a bit of gold to get into it.
I started the Cata expansion with about 100k on my account on various toons. I invested it all in buying herbs to mill to make inks for the decks. I have increased my gold 10fold.
Another thing to do if you arer a JCer is to purchase all the Pyrite Ore you can get your hands on. On my server atm it's selling for around 180g/stack. I recall when They released the epic gems for Wrath Titanium Ore jumped to around 600g per stack. If you were to prospect the ore though I'm sure you would make more than that with selling the cut epic gems and the powder.

I use enchanting.
I buy between 50-100 stacks of obsidium ores / elementium ores pr day, prospect them, use the green gems to make green jewelery (or use them to make Shadowspirit Diamonds), and then DE and sell the mats.
This gives me a neat profit of around 5k a day.
The pyrite is to expensive to give a good profit for me atm.

Im a herbalist/alchemist and this is what I do.
I farm about 3 stacks of each herb, that should get you a nice amount of volatile life. Save 15 for Transmute: Living Elements for life > air/fire/water and use those to transmute Truegold (these sell for around 800g on my server), the rest of the volatile life im using to craft the flasks which sell for most gold. Im earning atleast 800-1000 gold each day on those flasks and around 800 extra the days Im able to transmute Truegold. Ive been lucky aswell with transmute mastery proccing me 1 extra truegold 4 times out of 10 transmutations.
Im also saving any volatile air/fire/water that are left over to shorten the amount of days between Transmute: Truegold. You could ofcourse buy the required volatiles on AH...but to
earn
gold youve got to save gold aswell am I right?
Just farming herbs like this and waiting for the transmutation CD isnt alot of work, it depends when you decide to farm...I usually do it off-hours when im not working shifts at the booze-plant.

Kinda an old post, but...
In reality, it seems that Blizz has somewhat finally found some balance with all, or at least, most of the professions. Mining and herbing like always are good gold makers, and you can easily make 500g or more in a hour of farming for either. Skinning doesn't seem to be raking it in quite as well, but there is still gold to be had.
Alchys have flasks and xmutes and a few pretty good potions that sell pretty well.
JC's for the time, has it pretty well. Blue quality gems are actually easier it seems to come by than some (nightstone) of the lower quality ones, and most popular cuts are selling really well.
Chanters are having a good time with dusts and essence's, although without a secondary profession to provide greens to DE, getting a good stock can be a little tough at times. At least on my server, you can't find a green to DE for less than 50g on the AH, and with dust selling for around 10-15g each, its just not worth trying to play the AH for DE's.
Scribes are doing good with DMF cards and decks, relics, and fortune cards. Now that the fun rush of the lotto cards has seemed to be wearing off, I am using them to make Fortune Cookies and making a nice chunk off those.
Of course crafters of all kinds have their BoE epics to sell, and with Heroics getting much easier to farm, Orbs are much easier to come by.
TBH, the only profession that seems to be left out is, of course, Engineer's. At least with the rarity of Volatile Air, they have a decent way to make some gold with thier profession, but since it requires a gathering profession combined with Engi, the air's will always be just a side job at best.
