I was about to redirect you to the Hunter forums then saw the context of the thread.
So in your guys opinions please tell your favorite race/class for PvP, Raids, and just leveling up.
PvP: I'm really really neutral on this. I find it hard to choose a "favorite" because the fact is I've experienced PvP on every class possible in probably every spec and more or less enjoyed it at some point in time, regardless of how overpowered or underpowered they are.
Raids: Hunter, and to a lesser extent Warlock. This is mostly because these are the two classes I had at level cap for BC, Wrath, and now Cataclysm. Though I didn't do too much raiding in BC, I really enjoyed Hunter dps. It wouldn't stop me from going on my DK to tank or something though.
Leveling: Probably Hunter. It may feel monotonous, but Hunter level is usually quite low-risk, and teaches you some concepts of soloing, which can be applied later on if you choose that method to make a lot of money (dailies, dungeon soloing).
Race is usually pretty random. For instance, I chose Orc Hunter and Blood Elf Warlock. I never race change ever for the sake of racials. I stick with what I choose.
Regarding your question. I suggest trying a Warlock or Druid. It is tough going in the beginning, but they often become quite complex later on =D (depends on spec, of course).

But...
My hunter is level 50. I'm in pvp honor gear mostly, sort-of blindly specced into marksmen. I typically run a spider or the monkey. I seldom let my pet tank, and very grudgingly heal it --I look at my pet as an animated DoT that speed bumps the enemy for me. I have the excuse of being a long-lost returned player.
Even level content is cake. Elite dungeon mobs that are green or just grey are generally really easy to solo. If I attempt to use my CC abilities I can beat multiples pretty cleanly too. PVP I get smoked when I do dumb things, but generally succeed in supporting the team goals for a place like warsong. It's important to add here: I'm still a newbie (maybe even a noob) at playing hunter. If I want a challenge, I have to find mobs at least 5 levels higher than me.
On my priest alts (yes I have more than one) I struggle once past level 12 to not feel like it is taking forever. So I guess it depends on your definition of boring. But... those priests are currently dressed in mostly quest drops and are specced holy. Maybe not the faster levelling spec (I know it's not. I go holy on principle). Every other class/spec combo I have played (some of them, certainly not all) I have found to be pretty easy at the lower levels.
My conclusions would be:
-if it is boring or easy, are you really seeking challenges for the class? (This would be especially true for lower level content in my view). This could be doing odd spec and strategies, and/or killing harder stuff than you are "supposed" to.
-if it is boring because of the class mechanics... it's probably always going to feel boring to you. Though I can't speak to how some mechanics may evolve post 60.
