Look at title, I think it explain my "problem"
At the moment I have enchanting + mining but I'm not sure about 'em.

Enchanting: look at dust hypnotic prices. then look for green/uncommon armor 81-85 on AH. buy anything listed below 2x the hypnotic dust prices. disenchant. sell the dust. profit.
any essence you get is good (even more profit).
thats a start.
next i would look at installing auctioneer so you can see iLevel of items on AH. then you can search from 80-85 and skip northrend (ilevel 200) items.

Keep enchanting. Grab loads of ore from mining, drop that, level jewelcrafting.
JC + enchanting will not go far wrong. If you can get an alt with alchemy as well, you've got the best combo, and if you have inscription too, those are by far and away the best 4 to have for pure money making, assuming you know what you are doing.
And even if you don't, the obvious stuff (JC daily, transmute cooldown, D/E loot, fortune cards) is still easy cash.

Follow these easy steps to make a fortune with your professions:
1) Read any of the countless threads in this forum which deal with the exact same topic.
2) Learn to use google.
3) Read the stickies.
4) ?
5) Profit.
Edit: Yes I know that this probably counts as trolling. But when there are 2 other threads on the first page alone entitled "Best money making professions" and "Most profitable professions", I think that some people deserve it. There just seems to be something about the 'new topic' button that draws people in.
And besides, its one of those questions that has no definitive answer, since it varies greatly from server to server depending on economy, profession saturation and raw material availability.
I agree with what you said.

Read the linked topic. Don't think Wildhorn has updated it but most of the stuff stay rings true. Just learn your servers market.
I.E. If you see people asking trade for profession (X) then you may want to look into that profession.
